Chia Seed Pudding Time!

Hopefully you have heard of Chia Seeds as a food, as opposed to the little plant sprouting pets that were popular to grow on a windowsill back in the 80’s. Well, let’s be honest, it’s still fun to grow them… but that’s not what we’re here to talk about today. Today’s goal is to let you in on the benefits of Chia Seeds as a food.

Chia seeds are one of the best plant based sources of Omega-3 acids and all around one of the best foods you can eat in my opinion. They are high in fiber and great for gently cleansing your body as it moves through you. It is packed with 19 amino acids, containing all but one of the essential amino acids. It has a greater source of iron than spinach, more calcium than milk, and a bigger punch of antioxidants than blueberries.

You can sprinkle them on salads, add them to smoothies and sprout them, but my favorite way to include these little gems is to eat them as the treats that they are… IN CHIA SEED PUDDING!!!

CHIA SEED PUDDING

  • 1 ½ Cups Coconut Milk (Full Fat)
  • 4 Tbs. Pure Maple Syrup
  • 2 Tbs. Vanilla Extract
  • 1/3 Cup Chia Seeds
  • Berries to Garnish

In a large bowl, combine all ingredients. Refrigerate at least 2 hours or up to overnight before serving. Bring to room temp, at least 15 minutes before eating. Stir & serve. Yes, it is that easy!
